Green asparagus with cheese dressing and fried tofu salad dressings



asparagus season has arrived and started to enjoy this vegetable. Ingredients



- green asparagus
- olive oil, white vinegar
-
Olives - Capers
- Red Pepper
- Chives
-
feta cheese - tofu

Preparation

Asparagus cook them in unsalted water. We do not care too much (as it happened to me, as we see the picture). They should be tender but not mush. The prepare the vinaigrette with olives, capers, peppers, onions and feta cheese cut into strips. We need to get pieces as small as possible. We mix everything and add white vinegar and olive oil. No need to add salt. Feta cheese, olives and capers will not need salting.

The tofu is fried without oil, cut into strips. To avoid too boring, we can use some flavored tofu. I have used tofu tomato. Naturally you can also use some meat, like beef tenderloin.

Served accompanied by a fine palomino cold sherry.
